Easy peasy mac and cheezy! Just cooked up some shells and mixed with Trader Joe’s Vegan mozzarella shreds, topped with a swirl of olive oil and Sriracha. Delicious!!!!
Used Oh She Glows’ fab recipe to make vegan pumpkin mac and cheeze last week - well, I dictated the recipe to my roomate and she made it since I was so sick. I didn’t use Earth Balance and subbed with butter-flavoured olive oil from Saratoga Olive Oil Co. instead, which really added a rich, deep flavor; made cashew milk since I didn’t have almond milk on hand; and didn’t use any nooch as we were out. So good! Especially with extra salt, a drizzle of olive oil and pepper.
S’mac
I went to see The Hunger Games again at the theater in Union Square last night and was in desperate need of additional junk food after the film, and I had been thinking about S’mac a lot lately. When I have something I really want to eat in my head, or a place to go, I will literally freak out until I get a chance to go.
The most wonderful part about living in beautiful NYC is that they make basically anything anywhere vegan, and S’mac of course happened to have a vegan option, composed of coconut milk, rice flour, potato flour, palm oil, organic palm shortening, marmite, salt and pepper. It was interesting to have a mac and cheese without nooch and it was so creamy and yummy! I got it with shittake mushrooms, roasted brocoli and roasted tomatoes - they have lots of other great options too. It was super-fast and under 10$ for a mondo-potion. S’mac has an eat-in option as well as take-out.
Now, I have to stop eating carbs…

Last Saturday, Joelle and I strolled from my place in La Bella Bushwick all the way to Williamsburg (so basically from the Halsey L stop to the Bedford L stop) to eat the magnificent munchies of Foodswings, which never fails to disappoint.
They had a fabulous brunch menu listed outside but after much debate, I got a plate of three drumsticks (buffalo, BBQ and sweet southern BBQ) and Daiya mac & cheeze. The buffalo drumstick was SUPER spicy, but both BBQ drumsticks were absolutely amazing, and it’s so satisfying to eat “meat” off the “bone” (a wooden stick in the middle of the drumstick)! The mac and cheeze was delightful as well. I got totally stuffed.
Joelle got a Philly Cheezesteak, which is my new favourite food. Seriously. I wanted to eat the whole thing. I have been fantasizing about when I’m going to go back and get it. She also got two buffalo wings and ate it all. I was impressed!
Atmosphere - wise, basically no one was in there for Saturday lunch, and it was nice to sit at the window and people-watch. The eatery has cleaned up a bit since I last went and looks nice, and the food is well-priced for the quality ingredients they use.
GO AND EAT EVERYTHING.

THE JOY AND WONDER OF VEGAN MAC AND CHREEZE WITH HOMEMADE TEMPEH BACON AND BROCOLI.
This was made with epic vegetable corkscrew pasta that I am obsessed with and want to eat every day - I buy mostly whole wheat or vegetable pasta now - I assume vegetable pasta is remotely good for you? I topped it with homemade bread crumbs (aka, I toasted a piece of bread and put it on top of the pasta), more chreeze, storebought soy mozzarella, and vegan parm - see how nicely everything melted on top? That’s because I popped it on the oven for a few minutes. It was so yummy and my non-vegan baby bear loved it too!
I had leftover “cheese” from yesterday, so I made israeli couscous and “cheese” with the rest of the kale I had. It was so good. The couscous was like little balls of joy.
First experience with homemade mac and “cheese” and I must say I am quite pleased with the results! The sauce could have been creamier (maybe soy milk instead of water) and I put in a little too much pepper, but it was still YUM.
I used this recipe for the cheeze sauce.
It’s so easy to make! I think it’s mostly intended for nachos but it really made a great, easy sauce for macaroni as well.
I got some beautiful curly kale at the farmer’s market, sauteed it in butter with some salt and pepper and YUM. It’s so amazing. And I just mixed everything in, and I was so pleased.
