everything bagel pasta

What you may ask? Yes it is vegan

A sweet dinner we made when my love Miss Amy was visiting! We made pumpkin hummus, had steamed veggies with Adobo, made a salad of baby greens with tomatoes in a yummy apple cider vinegary dressing and had Trader Joe’s falafel. So very tasty and healthy!

Friday was a fancy sort of dinner evening, with produce from Grandma’s garden to use up as well as yummy things from the farmer’s market.

So here we have some basil quinoa (tricolor quinoa cooked with a bunch of basil leaves, essentially, which upon cooking got more basil added in as well as a drizzle of olive oil, salt and some pepper) which I served both on the side and stuffed into squash blossoms - baked in the oven for like ten minutes until crispy at approx. 425 degrees (I was also roasting beets, too). The squash blossoms were the main event of the dish, and super. I love eating flowers.

I also sauteed beet greens with olive oil and a ton of garlic. They were amazing. Beet greens are quite possibly my new favorite thing to eat.

Somedays for dinner I like to make everything-but-the-kitchen-sink meals and see how that goes. After going to the beach on Sunday we had soba noodles, leftover basil quinoa, hemp seeds, roasted beets, steamed bok choy and twice-roasted eggplant (because that’s a thing now, I’ve decided) tossed in sesame oil, sriracha, soy sauce and rice vinegar. We had a giant bowl of food and it was quite yummy - especially the soba noodles and bok choy.

Dinner from this evening: pasta with tofu ricotta and sauteed onion, asparagus, chickpeas and zucchini in olive oil and aged balsamic salt. Everything but the kitchen sink, basically, and so yummy.

Typical quick dinner: 1/2c cooked quinoa, a handful of sliced tomatoes and raw dinosaur kale and a block of Trader Joe’s savory baked tofu topped with Oh She Glows’ Red Lentil Hummus - which I ended up not using enough lentils in (just cooked what I had left which didn’t amount to much and pulsed with a clove of garlic, some salt and a scoop of tahini sauce). Easy yum.

Sacred Chow

Guys, vegan tapas are BOMB. 

Went to Sacred Chow last night and ordered roasted black olive seitan, root vegetable latkes with indonesian date butter and spicy peanut soba noodles. At 18$ for three plates, it was a total (delicious) steal. The seitan came with a side salad and was dressed with some amazing sauce. I can’t even tell you how amazing the seitan was. The soba noodles were perfect. The latkes were awesome. My only complaint was that the date butter was served in a little cup, so it was difficult to dip the latkes in. 

The service was quick and friendly. The beer list was good (I had a Bard, which was so tasty). There weren’t a lot of people there - but it was a total hole in the wall, so understandable. Such a pleasing dining experience.

I highly recommend Sacred Chow to my fellow vegans, happy eating!
